Bucha Brewhouse & Bistro opened its doors on September 29th, 2018 in the Grassroots District of Downtown Princeton. Owner, Kayla Alred, holds the vision of encouraging a culture in West Virginia that empowers citizens to take control of their health and well-being. Bucha provides a daily rotating menu with a variety of food styles and puts fresh ingredients to creative use for things like their house-made tofu mayo and cashew “cheesecakes.”
Kayla and crew take pride in making all of their sauces and dressings from scratch to ensure they are vegan and gluten-free. They craft their “creamy” soups with various types of plant-based milk and thicken them with cornstarch instead of flour.
Kayla also works closely with local farmers so she can source as much West Virginia-grown produce as possible. Therefore, much of the produce you experience at Bucha is sourced from our very own Mercer County Tailgate Market.
